Baur's History

"For long time Colorado residents, the name Baur's evokes memories of fine food and old-world elegance" (1) Otto Baur founded the restaurant, bakery and candy shop while Colorado was still a territory, and spent the next 100 years enticing customers through its doors. The company slogan, "Famous for Good Things to Eat" is now the legacy of the new Baur's Ristorante.

Otto Baur, a German immigrant, came to Denver in the 1860s. He served free biscuits to the Indians camped in Denver, and eventually formed a partnership with James Colwell. The two rented a store at G (16th St.) and Lawrence and began a confectionery, bakery and catering house. Mr. Colwell shortly moved to Wyoming to develop his own business, and Otto Baur moved to this location (at 15th and Curtis) in 1891. The prosperity of the time brought success to the Baur family, and Baur's quickly became the most popular catering service for all of Victorian Denver society.

Baur's soon became famous for its ice cream, serving treats from the polished and inviting soda fountain. In fact, Otto Baur is credited for inventing the Ice Cream Soda. In 1918, Baur's added a restaurant, and served stylish business and social lunches to Denver's growing community. Famous for its Mija Pie, Deviled Crab, French Mints and Chocolate Torte – the Baur's tradition of fine food was holding strong. Later the restaurant, now under the ownership of Otto's nephew Joe Jacobs, passed out free ice cream cones to thousands of children during the Great Depression.

In 1955, Baur's moved to the new and modern Cherry Creek shopping center. And by the 1970s, the Baur's building at 1512 Curtis street was vacant. In the fall of 2007, Jimmy Lambatos leased the restaurant space and opened the new Baur's Ristorante with his partner, Rachel Schultz. The restaurant is thriving in Denver's Theater District. The new Baur's is not only a tribute to Denver's past, but also an exciting new dining experience not to miss.
